1 giant onion, roughly chopped  Â
4 medium carrots, roughly chopped  Â
2 celery sticks, roughly chopped  Â
3 garlic cloves, crushed  Â
3cm piece recent root ginger, peeled and grated  Â
1.5 litres boiling vegetable inventory, appropriate for vegans  Â
1 giant cauliflower, damaged into small florets  Â
2 tbsp delicate curry powder*Â Â Â
175g dried purple cut up lentils  Â
100g plain unsweetened soya yogurt with added calcium  Â
pinch of cayenne pepper, to serve   Â
chopped recent mint and/or coriander, to serve  Â
